Winemaking
We select the best grapes from low production vines from our own Sauvignon Blanco vineyards, with a planting density of 4,000 plants per hectare.
The grapes are harvested in special boxes of 15 kg each. The grapes are only harvested in the morning to maintain a good temperature until they reach the winery. Once at the winery, the full boxes are placed in a cold room, keeping the grapes at -10 Ā°C.
We select box by box and proceed to destemming and crushing. We place all the resulting grape paste in a stainless steel tank with a cooling system to subject the grapes to a cold skin maceration (8 Ā°C) lasting more than 24 hours.
The grapes are then transferred to the pneumatic press for a light pressing of no more than 0.5 bar. The must extracted from the press is decanted statically for 24 hours and then only the clean part of the must is fermented in new American oak barrels with a capacity of 400 litres each at a temperature of 14 Ā°C. Once fermentation is complete, the wine is kept in barrels until bottling.
Consumer advice
Serve at 12 Ā°C. Any precipitate that can be seen in the wine is natural, as we try to produce the wine with the minimum possible filtration in order to appreciate all its quality to the maximum.
