Winemaking
Pinot Noir is one of the finest and most elegant varieties on the international wine scene. Originally from Burgundy (France), it adapts fantastically in Utiel-Requena, where we currently have the only Pinot Noir estate.
The clusters are compact and small with black, purplish berries.
We select the best grapes from low production vines from our own Pinot Noir vineyards, with a planting density of 4,000 plants per hectare.
of 4,000 plants per hectare. The grapes are harvested in special boxes of 15 kg each.
The grapes are only harvested in the morning to maintain a good temperature until they reach the winery. Once at the winery, the boxes full of grapes are placed in a cold room, where the grapes are kept for 3 days at -10 Ā°C. We select box by box and proceed to destemming and vatting in new American oak barrels of 400 litres capacity where we have previously removed a bottom of the barrel itself. We introduce a water-cooled stainless steel plate into each barrel to allow cold maceration at 8 Ā°C for 4 days. Every day we manually sink the cap, barrel by barrel, and once fermentation has begun we close the cooling water so that the barrel itself can reach a maximum temperature of 26 Ā°C during fermentation.
After 15 days we pass the grapes to the pneumatic press for a light pressing of no more than 0.5 bar. The final esultant is aged for a minimum of 10 months in new French Allier oak barrels and bottled and lightly filtered.
Consumer advice
Serve at 16-18 Ā°C.
Any precipitate you may notice in the wine is natural, as we try to produce the wine with as little filtration as possible in order to fully appreciate all its quality.
